CHARDONNAY GRAPE

Origin of the raw material: Pomace is obtained from the grapes of
our Die Weinberge, in Friuli-Venezia Giulia, in the municipality of Porcia,
at Rondover.
Variety: 100% Chardonnay.
Features: the pomace is delivered to the distillery not fermented, as it is
just separated from the must, it is rich in sugar.
Distillation: discontinuous distillation method, steam powered.
Aging: in stainless steel tanks for around 10 months.
Alcohol content: 40% vol.
Ageing capacity: like all spirits it has no special storage problems, but
over the time it improves its organoleptic characteristics. The important
thing is to keep the bottle upright.
Colour: bright, colourless, transparent.
Aroma: pleasant and intense, persistent and fruity with hints of Golden
Delicious apples and bananas.
Taste: dry, fresh, slightly aromatic, full but very fine and discreet,
persistent aftertaste.
Accompaniment: Classic digestive, after meal.
Serving temperature: 12-14°C. During the summer season even lower
temperatures are recommended.
