CABERNET FRANC - Friuli Grave Doc

Production zone: alluvial plain in Friuli-Venezia Giulia, west zone of
Friuli Grave Doc appellation, municipality of Azzano Decimo.
Grape Variety: 100% Cabernet Franc.
Vineyards: guyot training system, 4.000 vines per hectare, yield 100 ql/Ha.
Harvest period: IV week of September.
Vinification: crushing and destemming, followed by approximately
10-15 days maceration in stainless steel tanks at controlled temperature
(26-28°C); after racking, aging in stainless steel vats and bottling done
after eight months of harvest.
Alcohol Content: 12,5% by vol.
Aging Potential: to be drunk immediately or to be kept up to 1-3 years.
Colour: intense ruby red with purple reflections.
Nose: pleasant and intense aromas, very characteristic, offers a wide range
of fruity sensations of blackberry, black cherry, raspberry, with obvious
herbaceous notes reminiscent of freshly cut grass and hay.
Palate: fresh, round, harmonious, with decidedly marked tannins but soft
and pleasant. Aromatic aftertaste, with all the notes already nosed returns
with intensity and long persistence.
Food Pairing: it combines perfectly with cold meat, roasted red meat,
game; excellent especially with pitina of val Tramontina, Guinea fowl and
with mixed mushroom patty.
Serving Temperature: ideal at 18-20°C.
