PERLAE NAONIS - CUV╔E BLANC DE BLANCS - Millesimato Extra Brut

Production Area: alluvial plain, in the municipalities of Azzano Decimo and Porcia.
Grape Variety: 100% Chardonnay.
Vineyards: guyot training system, 4.000 plants per hectare, yield 80 ql/Ha.
Harvest Period: IV week of August.
Vinification: destemming, gentle pressing, racking, decanting and fermentation in stainless steel tanks for 8-10 days at a controlled temperature (16-18░C), aging in stainless steel tanks waiting for the sparkling process.
Sparkling Process: re-fermentation in pressurized tanks for about 50 days at a constant temperature between 14-16░C, until reaching 6 bar of pressure; the mass is then cooled to halt the fermentation and kept at controlled temperature of 8-10░C for 9 months, to encourage natural refinement in contact with the lees. At the end of this phase it is followed by filtration and isobaric bottling.
Alcohol Content: 12% vol.
Aging Potential: to be drunk immediately or to be kept for 4-5 years.
Perlage:fine, delicate and persistent.
Colour: striking yellowish straw colour.
Nose:has complexity of aromas and elegance. Strikes with variegated floral and fruity notes, with fragrance of bergamot and mandarin orange, which blends with the bouquet of aromatic herbs.
Palate: creamy, with a pleasant verve; good persistent finish outstands with flavour and nuances of fresh and dry fruits.
Food pairing: excellent as an aperitif, can be enjoyed throughout the meal with fish dishes, crustaceans and is particularly recommended with raw seafood.
Serving temperature: ideal at 6-8░C.
