Reserve wines represent the pinnacle of San Simone’s winemaking excellence, exemplifying the finest traditions of Friuli. These exceptional wines are crafted using only the richest grapes to achieve the highest levels of typicity, elegance, and concentration. While we primarily use stainless steel for fermentation and maturation, over the past three decades, we have explored the use of small barrels for select varieties of red wines to further enhance the natural characteristics of the fruit and the distinctive qualities of the Friulian land. The barrique serves not to dominate or overshadow but to subtly complement, acting as a discreet and harmonious element in the winemaking process.
